Teff takes the lead of all grains in terms of calcium content. With one cup of teff equalling about 1/3 a cup of cooked spinach in calcium content.
A newly found marvel about teff, is that it's high in resistant starch, a newly-discovered type of dietary fiber that can benefit blood-sugar management, weight control, and colon health. It’s estimated that 20-40% of the carbohydrates in teff are resistant starches. A gluten-free grain with a mild flavor, teff is a healthy and versatile ingredient for many gluten-free products.

Originating in Ethiopia, and with it's technical name being Eragrostis tef which translates to 'love grass'‘lost’ which relates to the tiny size of the seed, very similar to Poppy Seed.
