Knowing they are gluten free is first and foremost, as these were part of our diet before the celiac diagnosis. Another nutrient rich food, we find they are best ground into a meal, for maximum digestibility. I currently use the meal on salads and in baking, and am currently enjoying fudgy paleo brownies with pepita paste for greater richness and far greater nutrient density than butter. Thanks, GFH!
