Ingredient terminology can vary between countries, which sometimes leads to confusion when reviewing overseas recipes, technical specifications or supplier information. The following guide outlines some of the most common naming differences encountered by Australian food manufacturers.

Australian Term Common International Term Notes
Tapioca Starch Tapioca Flour In Australia, the terms tapioca starch and tapioca flour are generally used interchangeably. Both refer to the purified starch extracted from the cassava root. In many international recipes, particularly from the United States, "tapioca flour" usually refers to the same ingredient.
Cassava Flour Cassava Flour Despite being derived from the same plant as tapioca starch, cassava flour is not the same ingredient. It is produced from the whole cassava root and retains more fibre, making it behave quite differently in baking and formulation.
Arrowroot Starch Arrowroot Powder True arrowroot is produced from the rhizome of the arrowroot plant (Maranta arundinacea) and is a different ingredient to tapioca starch. It provides excellent thickening properties but behaves differently in some applications.
Cornflour (Australia) Cornstarch (USA) Australian cornflour is the purified starch extracted from maize. In the United States, this same ingredient is called cornstarch.
Maize Flour Corn Flour (USA) Australian maize flour is finely milled whole maize containing protein, fibre and starch. In the United States, this ingredient is commonly called corn flour, which can cause confusion with Australian cornflour.
